MEDITERRANEAN SPINACH GRILLED CHEESE SANDWICH
In a medium pan, heat olive oil over medium heat and add minced garlic.
Add spinach leaves before the garlic darkens and let it cook for a minute stirring occasionally until it is partly wilted. Take it off the heat and set aside.
In a pan, melt half the butter on low to medium heat. Place the sandwich carefully in the middle of the pan and press down. Leave it for two minutes until the bread browns and the cheese melts.
To assemble the sandwich, place one toast on a clean surface, stack it with the grated Red Hot Dutch followed by the round sliced tomatoes. Press down to flatten the cheese. Add spinach, then onions and olives. Add the grated Herby cheese then the other toast slice and press down again to flatten and even out.
Remove sandwich from pan to melt the other half of the butter. Place sandwich back on the other side to fry it for two minutes. Remove from pan.
Let it cool for a minute before you cut it diagonally and serve warm.
